French Market Black Olive Tapenade

French Market Black Olive Tapenade

2 cups black Olives
1/2 cup green Olives
3 cloves Garlic
3 tsp. Capers
1 tsp. Anchovy Paste
1/2 cup Olive Oil
1 tsp. Red Wine Vinegar (optional)
Salt, to taste
Pepper, to taste

Place all the ingredients except the vinegar in a food processor, and process until well combined, scraping down the sides as needed. Taste the tapenade and add vinegar if you would like it to be more tart. 

Season with salt and pepper to taste. 

Serve with baguettes, cheese, whisked into a vinaigrette, with tomatoes - and anything else you can imagine! 

Makes roughly 2.5 cups of tapenade, and keeps for up to two weeks in the refrigerator.
